The Languedoc-Roussillon region is the single largest wine-producing region in the world. A few appellations to try on your trip:
Coteaux du Languedoc: Produces a full-bodied red wine with raspberry, black currant, and leather aromas, as well as a light rosé and a light dry white; good with red meat, roasted turkey, sausages, and salami.
Côtes du Roussillon: Produces a medium-bodied, slightly spicy red wine with a black licorice aroma, as well as a dry light rosé and a dry white wine; good with feathered game and cheddar cheese.
Fitou: Produces a dark, powerful red wine with vanilla and spice aromas; good with game and turkey.
Minervois: Produces a full-bodied red wine with cinnamon and violet aromas, as well as a dry white wine with citrus aroma; good with omelets, salami, and chicken.
